Allergens & Ingredients


UK law requires us to highlight 14 specific allergens.  These are:  celery, cereals containing gluten (such as wheat, barley and oats), crustaceans (such as prawns, crabs and lobsters), eggs, fish, lupin, milk, molluscs (such as mussels and oysters), mustard, peanuts, sesame, soybeans, sulphur dioxide and sulphites (if the sulphur dioxide and sulphites are at a concentration of more than ten parts per million) and tree nuts (such as almonds, hazelnuts, walnuts, brazil nuts, cashews, pecans, pistachios and macadamia nuts).


We use Camden Tablets which contain Sodium Metabisulphite as part of our brewing process.

Historically (in 2022, just in case anyone still has a bottle sitting around), we used Marmite Yeast Extract in our brewing process for the Ebblight (Limited Edition), Fægerdrōm and Géola Meads.  This applies to batch numbers 220522 (Ebblight), 230722 (Fægerdrōm) and 180722 (Géola).  Marmite Yeast Extract contains BARLEY, WHEAT, OATS, RYE, salt, vegetable juice concentrate, vitamins (thiamin, riboflavin, niacin, vitamin B12 and folic acid), natural flavouring (contains CELERY).


We know that our customers may have allergies or intolerances to ingredients that are not formally classed as allergens, and we believe that full transparency is essential.  We have therefore produced a full list of the ingredients used in our Meads and, where we use ready-made ingredients (such as the juices used in our Cysers and Pyments, our brewing sugar and yeast nutrient) we have shown the manufacturers list of ingredients.


We use Dextrose (or Brewing Sugar) as part of our brewing process.  Dextrose is made from corn or wheat – however, it is classed as gluten free and can be consumed by people with coeliac disease.  The Coeliac UK state on their website:


“Dextrose is gluten free. It can be made from wheat but the production methods involve a high level of hydrolysation, which means that no gluten is left in the sugars. The final ingredient is gluten free and dextrose can be eaten by people with coeliac disease.”

Our Meads and Cysers are triple filtered, however, you may find a small amount of sediment in our bottles. Please be assured that this is normal and not harmful.  If you do find any sediment in our Meads, pop the bottle in the fridge.  When you are ready to serve the mead, remove it from the fridge and decant into either a pitcher or a glass (just as you would with an aged red wine).


We use a Fermentation Stopper/Wine Stabiliser* and Camden Tablets* at the end of our brewing process to prevent refermentation and spoiling.

Brewing Sugar:  Glucose/Dextrose.

Yeast Nutrient:  Diammonium Phosphate, Magnesium Sulphate, Magnesium Carbonate, Albumin Nicotinamide, Aueurine Hydrochloride, Trace minerals, Trace Vitamins.

Wine Stabiliser:  Potassium Sorbate (E202)


Camden Tablets:  Sodium Metabisulphite (E223), Polethylene Glycol

Summer Fruit Juice: water, apple juice from concentrate, raspberry juice from concentrate, strawberry juice from concentrate, acid: citric acid, flavourings, colour: anthocyanins, sweetener: sucralose.

Apple Juice:  Apple juice from concentrate – 100%.

Red Grape Juice:  Red grape juice from concentrate - 100%.
